10" Gyuto forged from AEBL stainless steel. Edge geometry is ground flat to convex and is extremely thin and aggressive. This blade is a laser, balanced at the pinch point, and is well suited to working with ingredients of all sizes, but should never be used around bones. Handle is Black & White Ebony with a frame construction secured with stainless pins. Suitable for all hand sizes.
