10" Slicer in 80CRV2 carbon steel featuring a hand pulled finish, paired with a dyed Koa handle and a stainless bolster. This balanced and sleek slicer is well suited for slicing all boneless proteins, though it is not recommended for carving as bone contact will damage the edge if care is not taken. The edge geometry is very thin and aggressive with a flat-to-convex profile as the bevel reaches the textured flats. This blade will ship with a wood saya (blade cover) included.
