160mm Gyuto forged from 52100 carbon steel with a satin machine finish. Edge geometry is ground flat to convex and is very thin behind the edge. This featherweight Gyuto is well suited for small work and breaking down larger ingredients as well. Handle is spalted Elm with Oak dowel construction around a hidden tang. Suitable for all hand sizes. Ships with saya made from Poplar.
