173mm Harpoon Gyuto forged from house made San Mai consisting of a 1084 carbon core clad with canister Damascus made from nickel powder and 150 year old wrought iron nails. Edge geometry is ground full flat with slight convexity and a robust yet thin grind behind the edge. This knife is a featherweight featuring a harpoon clipped point and flat heel to accommodate a variety of tasks in the kitchen. Handle is dyed and natural flame Maple with stainless and fiberglass spacers. Suitable for all hand sizes. Ships with saya made from local PA Maple.
