190mm Gyuto forged from shop-made steel featuring 22 layers of alternating carbon and stainless shim stock welded to a core of W2 carbon steel. Handle is Beefwood built around a composite frame and is suitable for all hand sizes, while those with particularly small hands may not prefer the heft. Geometry is ground full flat and to zero at the edge.
