200mm Santoku forged from house made Juu-Ichi lamanate (11 layers) consisting of mild steel, 15N20 with carbon, stainless and nickel shims and a 52100 carbon core. Edge geometry is ground flat to convex and is extremely thin as a Santoku should be. This Santoku is well suited to working with ingredients of all sizes, but should never be used around bones. Handle is figured Dogwood harvested from the woods of Pennsylvania with a stainless steel spacer. Suitable for all hand sizes.
