210mm Gyuto forged from shop-made Hachi Mai (8 layers) featuring mild steel cladding with nickel and carbon shims welded to a core of Aogami Super carbon steel. Handle is my tapered Wa style design in Ambrosia Maple with a stainless spacer. Geometry is ground full flat and very thin at the edge. Handle is sized to suit all hands. Ships with a saya made from Cherry wood.
