230mm Gyuto in 52100 carbon steel featuring a hand pulled finish with a dyed Amboyna burl handle built around a multi-layer composite frame. Laser thin flat-to-convex edge geometry will make this blade an instant favorite with the balance point placed at the ricasso, best suited to a pinch grip. New handle design with both geometric and compound facets blended together for a handle that fits curiously well in the hand, now made to suit both left and right handed users.
