230mm Gyuto forged from 52100 carbon steel. Edge geometry is thin and aggressive with a flat to convex grind. This is a laser of a chefs knife that will prove to be a workhorse on the line or at home. Handle is Curly Koa with brilliant depth, lined with faux Tortoise Shell and secured with stainless bolts. Not intended for working around bone. Suitable for all hand sizes. Ships with saya made from White Oak.
