230mm Gyuto forged from house made Kyū Mai laminate (9 layers) consisting of a 304 stainless jacket, stainless and carbon shims with an ApexUltra carbon core. Heel height to spine is 60mm with an aggressive flat to convex geometry, razor thin behind the edge and a distal taper towards the tip to improve balance and allow finer work capability at the tip. This is a jewel of a knife with the heart of a workhorse that will perform nearly any task that you can expect of a chefs knife. Handle is Amboyna Burl with G10 spacers and a sculpted brass bolster. This handle design has both geometric and compound facets blended together for a handle that fits curiously well in the hand, made to suit both left and right handed users.
