230mm Western Gyuto forged from house made Ku Mai laminate (9 layers) consisting of a 304 stainless jacket, 15N20, stainless and carbon shims with a 52100 carbon core. Heel height to spine is 70mm with a aggressive flat to convex geometry, razor thin behind the edge and a distal taper towards the tip to improve balance and allow finer work capability at the tip. This is a jewel of a knife with the heart of a workhorse that will perform nearly any task that you can expect of a chefs knife. Handle is Desert Ironwood with two tone liner secured with brass bolts, shaped with a faceted palm swell for a natural feel in a pinch grip. Not intended for working around bone.
