7.25" French Chefs forged from 52100 carbon steel with a mustard base patina to assist in the carbon steel break-in process. Edge geometry is ground flat to convex with a robust yet thin grind behind the edge. This knife is very light and feels confident in the hand for hours of effortless use. Handle is dyed Buckeye Burl with a fiberglass frame and hidden tang. Suitable for all hand sizes. Ships with saya made from local PA Maple.
