7.75" French Chefs knife in 80CRV2 carbon steel with a recycled cotton micarta handle and composite liners, secured with stainless steel bolts. Biased machine finish with thin flat-to-convex edge geometry and 50/50 pinch balance point. The tall heel on this blade allows for ample knuckle clearance even for large hands, a blade well suited to most everyday kitchen tasks.
