9" Gyuto forged from house made San Mai lamanate consisting of a stainless steel clad low layer Damascus core made from 1084 and 15N20. Edge geometry is ground flat to convex and is very thin behind the edge with a hand pulled satin finish. This Gyuto is well suited to working with ingredients of all sizes, but should never be used around bones. Handle is shaped from a gorgeous piece of Afzelia Xylay paired with a brass bolster and G10 spacers. Suitable for all hand sizes. Ships with a saya made from Cedar.
