This pair is a one of a kind, never to be replicated collaboration with my friend and super talented blacksmith Joe Garnett of Thorn Wood Forge based in Somerset, England. Joe and I each forged, ground and finished 8" Chefs knives in our own particular style, and swapped them to build handles for each other's blades. Joe's knife is forged from San Mai featuring a 52100 core clad with chain link wrought iron salvaged from the river Thames in London, sporting a unique and very attractive double compound grind with a handle made by me from "feather" crotch wood Maple paired with Buffalo horn, brass pins and spacer with the sapwood of the tree left intact at the butt of the handle. My 8" Gyuto is forged from house made Go Mai (5 layers) consisting of low layer Damascus clad 52100 carbon steel, featuring laser thin flat to convex geometry, and a handle made by Joe of marbled Carbon Fiber with stainless pins and frame brought to a high polish. Both of these chefs knives are excellent all-rounders in the kitchen with thin and aggresive geometry. Joe crafted a beautiful hand stitched leather saya for his blade, and my blade comes with a saya made of Poplar. Both are well suited for all hand sizes. ***These knives are sold together***
