220mm Signature Gyuto, a simple but effective production knife made with my go-to carbon steel 52100. Made to be a workhorse in any kitchen and affordable, this knife has quickly gained favor with line cooks and home cooks alike. Geometry is ground flat-to-convex and is quite thin behind the edge for performance, with a machine satin finish on the blade. Handle is made from Richlite, a sustainable paper composite, and secured with two stainless bolts. Heel height to spine is 50mm. Suitable for all hand sizes.
